			<content:encoded><![CDATA[<p>We&#8217;re going to start working on eating healthier in the new year, especially focusing on dinner, when we were usually tempted to overeat or to eat too late at night.  The problem is we both work and have two young kids, so whatever we cook at night is usually done very quickly.  Since &#8220;bad&#8221; food is usually easier to make, that&#8217;s what we tend to gravitate to.<br />
Does anyone have any ideas of any healthy, quick to make recipes for dinner?  We do like to make chicken, pork and fish.  Not real big red meat eaters.  Any advice would be appreciated!</p>

This is a list of mistakes to avoid if you don&#8217;t want to spoil the food:</p>
<p>Don&#8217;t buy thin chops. The meat cuts need to be thick, because you have to further slice them, to create those pockets which will host the stuffing inside. If the meat is not thick enough, you won&#8217;t be able to slice it, you&#8217;ll break it and your stuffing won&#8217;t stay inside.</p>
<p>Don&#8217;t overcook the pork chops. They are usually tender, but if you cook them too much, they will become difficult to chew and not nice at all. You&#8217;ll look like an amateur cook, a noob, somebody who&#8217;s touching the skillet for the fist time in life.</p>
<p>Don&#8217;t exaggerate with the stuffing. Although it&#8217;s nice to have a bigger quantity of it, if you try to <a title="cooking stuffed pork chops" href="http://www.thefb.net/Food_Drink/stuffed-pork-chops/">stuff too much inside the chops</a>, you&#8217;ll have a hard time cooking them and they won&#8217;t be made even.</p>
